Quick Chimichurri Sauce

This is the first time I’ve made chimichurri sauce, and I wish I made it sooner!  Apparently its a staple in Argentinian cuisine. Its basically a herb sauce.  It is FABULOUS on steak!  It would also be great on fresh grilled chicken or fish. A great addition to our Valentine’s Day dinner!

Makes 4 servings

1/2 cup cilantro (if you don’t like cilantro, you could use all parsley)
1/2 cup parsley (I used italian parsley)
1 Tbsp white wine vinegar
2 Tbsp water
2 Tbsp olive oil
2 cloves garlic, roughly chopped
1/4 tsp salt
1/4 tsp red pepper flakes

Put everything in a blender (I used a magic bullet) and blend.  Pour over meat.  Leftovers would probably keep for a day or two in the fridge.

Nutrition per serving (approx 2 Tbsp)
Cals: 64  Fat: 6.8g  Carbs: 1g  Fibre: 0.3g  Sugars: 0g Protein: 0.4g
