Quick 3 Bean Salad

You’ll love this bean salad!  Its ridiculously easy to make, and you can use whatever beans you have on hand.  Last week, I had posted in the Recipe Club that I was slightly addicted to this bean salad I got at Costco.  Shereen, a girlfriend of mine was inspired to make her own as beans are so cheap, so she inspired me to do the same! I must say, it turned out really good, and its so quick and simple to make!

Quick 3 Bean Salad

1 x 19 oz can garbanzo beans (chickpeas), drained and rinsed
1 x 19 oz can black beans, drained and rinsed
1 x 19 oz can kidney beans, drained and rinsed
1 large red pepper, diced
1 large carrot, peeled and grated
Zesty italian dressing

In a large colander, rinse all the beans well.  If you don’t like this variety of beans, use whatever you want, or what you have on hand.  Put the rinsed and drained beans in a large tupperware container. Add in carrot and red pepper and mix.  Add in as much zesty italian dressing to fully coat the beans. I used about 1/2 of an entire bottle.

You can eat right away, but it tastes best the next day when the flavors have a chance to develop.

* I still need to calculate the nutrition on this recipe. I didn’t measure out the dressing (oops!)

Hope you enjoy it!
