Low Carb Egg Salad Wrap

This is a great lunch idea as its only a few ingredients, and simple to put together. Its a low carb way to make egg salad, and its really delicious!

Low Carb Egg Salad Wrap

Serves 1

2 hard boiled eggs, mashed (for lower fat use 1 egg & 1 egg white…saves 5 g of fat)
1 Tbsp low fat mayo (I use Hellmans, could also use 0% greek yogurt to save 5 g of fat)
1-2 tsp yellow mustard
1 small dill pickle spear, chopped
1 tsp pickle juice
Pepper (to taste)
1/4 tsp dill (dried) – optional
2-3 romaine lettuce leaves, washed & patted dry

In a small bowl, mash egg, add in all other ingredients except lettuce.  Spread egg mixture on lettuce leaves, wrap up and eat.

Nutrition (entire recipe)   Calories: 170   Fat: 12.6 g   Carbs: 3 g   Fiber: 1 g   Sugars: 1 g   Sodium: 320 mg   Protein: 12 g

    What a genius idea greek yogurt instead of mayo! I do that with tuna fish, but I don’t know why I never thought of doing that with egg salad! Can’t wait to try out this recipe!!! Thanks Kristine!!! 🙂

    I love the idea of using Greek yogurt in egg salad rather than mayo – not against it for nutritional reasons but don’t always like the taste of it in egg salad (even though I LOVE it in garlic aioli, for example!). And I’m a huge fan of crunchy lettuce wraps! Great lunch!

    Yum! I love egg salad and didn’t eat enough of it as a kid because I was always embarrassed by the smell of it in my lunch bag at school! I usually make it with Greek yogurt now, and sometimes add in chopped cucumbers or celery too. Great idea to mix in the dill!

    YUM! I’ve always done “tortillas” with lettuce but never thought of using egg salad!! BRILLIANT! Will have to do it asap!
