Warm Apple Pie Bars with Greek Yogurt Topping

Ingredients
For the Crust
  • ¾ cup graham cracker crumbs (for gluten-free, I used 7 S'morables Gluten Free Graham Crackers, pulsed to make crumbs)
  • 3 Tbsp chia seeds
  • ½ cup whey protein (I used Whey Gourmet. If you want to omit protein, add extra graham crumbs)
  • 4 Tbsp melted butter (or coconut oil)
  • 20 drops vanilla stevia *optional (I used NuNaturals)
For the Filling
  • 1 tsp butter (or coconut oil)
  • 2 medium apples, peeled and thinly sliced
  • 1 tsp cinnamon
  • 2 Tbsp coconut sugar (or brown sugar)
  • ½ tsp cornstarch
  • 3 stevia packets (or sweetener to taste)
  • 4-6 Tbsp water
For the Topping
  • 1 cup non-fat greek yogurt
  • ½ tsp vanilla
  • 20 vanilla stevia drops
Instructions
  1. Preheat your oven to 350 degrees F.
  2. In a bowl, mix together all the crust ingredients, drizzling in the butter last. Mix together with a fork. Press the crust into an 8x8 pan.
  3. Place in the oven and bake for 10-12 minutes until the crust is golden around the edges.
  4. Meanwhile, peel the apples and slice thinly. Place in a medium bowl and toss in the cinnamon, coconut sugar, cornstarch and stevia. Lightly fold in so all the apples are coated.
  5. Heat a skillet over medium/high heat. Place in the butter, once melted add in the apples.
  6. Cook the apples, and add water 2 Tbsp at a time until the apples are tender and a thick sauce is created from the juice and water.
  7. Once the crust is out of the oven, pour the warm apples over top and allow to cool down for 20 minutes.
  8. Meanwhile, mix together the ingredients for the greek yogurt topping in a small bowl.
  9. Cut into 8 pieces. Bars will still be warm. They will be pretty fragile, so be careful getting them out of the pan.
  10. Serve each bar with 2 Tbsp of the greek yogurt topping on top.
