This is an excellent salad I whipped up one evening for dinner. My husband has been out of town, so salads are a regular thing if I’m eating solo. But this was so good, I’m going to double it for both of us next time! If your kids are on board with Asian flavors, they may like this one too! You could also quickly stir fry the cabbage to make it a warm salad!
Asian Chicken Salad
Makes 1 serving
1/2 small package of coleslaw mix (3 cups)
3 oz coarsely chopped pre-cooked chicken breast
1 small mandarin orange, peeled
1 Tbsp sliced almonds
Dressing:
1 Tbsp low sodium soy sauce (or Bragg’s Liquid Amino’s for gluten-free)
1 Tbsp rice vinegar
1 tsp sesame oil
1 tsp honey (or use all stevia for no sugar)
1 packet stevia
1/2 tsp mustard
1/2 tsp bottled fresh ground ginger
Optional: 1/4 cup fresh cilantro leaves, torn up
