Berry Breakfast Bars

These bars are so easy to make and very versatile.  They can be made no-bake (or bake!).  I prefer the no-bake version as they are more chewy and less dry, but hubby thought they were good baked too.  If you prefer other fruit over blueberries/raspberries, you could do that too.  Strawberries, peaches, cherries or  apples would all be great too!  These bars are also gluten free.

Berry Breakfast Bars

Makes 12 bars

Bars:
2 cups quick oats
3 x 30 gram scoops (3/4 cup) whey protein, vanilla (If you’d like to omit protein, just add an extra 2/3 cup – 3/4 cup oats)
1/3 cup stevia baking formula (or 12-13 packets)
1/2 cup peanut butter
1/4 cup unsweetened coconut
1/2 cup water (may need an extra 1 Tbsp)

Topping:
3/4 cup blueberries (I used frozen)
3/4 cup raspberries (I used frozen)
6 packets of stevia
pinch cinnamon
1/2 tsp – 1 tsp cornstarch (mix with 1-2 Tbsp water for no-bake version. For bake version, just coat the berries with the cornstarch)

To Make No-Bake

Mix together all the ingredients in the bars, and press into a greased (or sprayed) 9×9 pan.  On the stove over medium heat, combine all the topping ingredients and simmer together until thickened (add extra cornstarch until its fairly thick).  Pour the topping over the base and place in the fridge until set and cooled. Cut into 12 squares. Keep covered in the fridge.

To Make Baked Version

Preheat your oven to 350 degrees.  Mix together all the ingredients in the bars and press into a greased (or sprayed) 9×9 oven proof pan.  The next step you could do 2 ways.  1) Sprinkle the topping over the base and bake.  After 10 minutes you’ll need to place your oven on broil “HIGH” for an additional 10 minutes until the berries reduce down and thicken.

OR 2) On the stove over medium heat, combine all the topping ingredients and simmer together until thickened (add extra cornstarch until its fairly thick).  Pour the topping over the base and place in the oven for 10-12 minutes.

Cool and cut into 12 squares.  Store in sealed container in the fridge.

    what if I don’t want to use stevia? can i use maple syrup, or nothing at all?

      You can use whatever sweetener you want…maple syrup, honey, etc. If you use a caloric sweetener like that though…the nutrition will change.

    These are so yummy! Since I was out of corn starch and didn’t think of a substitute, I made the no-bake bars without corn starch and was very pleased. The liquid from the berries soaked into the oat mixture perfectly. I will keep making these without the corn starch.

      Any other sweetener you like….no calorie or honey etc. But nutrition will change.

      Yes, you can! You may just need to add more liquid or water if its too dry. That’s happened to me before when using brown rice protein.

    I’ve never had Stevia…never seen it before. Could I substitute honey or something else? These look delicious! I like having some at least semi-healthy snacks and breakfasts on hand, especially while I continue nursing a rambunctious toddler!

      Hi Blondie! Stevia in an all-natural no-calorie substitute for sugar. Yes, you could most definitely sub for honey. Just use the same amount as it calls for stevia.

      Do you mean like brown rice protein or hemp protein, etc? It probably would, I would just use a bit less (2 scoops instead of 3) and you might need a bit more water.       They would probably work fine without the stevia. They just wouldn’t be as sweet ;) Vanilla flavored protein powder does lend some sweetness though.

    Can I use Agave syrup instead of Stevia? If so, what do you think the exchange would be?

      Agave could work. Try with 1/4 cup, and use a bit more if not sweet enough.
