Cinnamon Roll Protein Pancakes

So clearly, I’ve had Cinnamon Rolls on my mind since I posted the recipe. But clearly, I can’t justify having Cinnamon Buns everyday. But protein pancakes, I can, so why not turn them into one? Brilliant!  If you’re really watching your calories, you *could* omit the 1 Tbsp of icing, or make the sugar-free version.  Personally, I like the real deal ;)

Cinnamon Roll Protein Pancakes (Gluten Free , could also be Dairy Free)

Makes 1 pancake

For the Pancake

1/3 cup oat flour (grind up old fashioned or quick oats in food processor/blender)
5 egg whites (I used 1/2 cup + 2 Tbsp liquid egg whites)
1/4 tsp cinnamon
Pinch baking powder
2 tsp sucanat (or coconut palm sugar or another raw brown sugar)
1/4 tsp cinnamon

For the Icing (same as in my Healthy Cinnamon Rolls, makes approx 1/2 cup total)

1 Tbsp butter (or vegan margarine), softened
2 Tbsp low fat cream cheese, softened (for dairy-free use Tofutti cream cheese substitute)
1 cup icing (powdered) sugar (for sugar-free options, mix 1 cup xylitol with 2 tsp corn starch to make an alternative icing sugar.  View some other options on Chocolate-Covered Katie’s Blog.)
1/2 tsp vanilla

Mix together all the “Icing” ingredients with an electric mixer or whisk and set aside.

In a small bowl, mix together oat flour, egg whites, baking powder and 1/4 tsp cinnamon with a fork until smooth.  In a small dish, mix together sucanat and other 1/4 tsp of cinnamon.  In a skillet sprayed with cooking spray, pour pancake batter and tilt pan to make an even-sized large thin pancake. Sprinkle over sucanat/cinnamon mixture into a swirl-type pattern.  Once bubbles appear around the edges, flip pancake and cook on other side.

Spread pancake with 1 Tbsp of the Cream Cheese Icing.

Note: The icing I used was some I had stored in the fridge, so it became hard. I melted the 1 Tbsp in the microwave so it was like a cream cheese icing syrup! Delicious!

* I separated the nutrition in case you wanted to use another icing option or omit it ;)

    Those are amazing stats and they are seriously drool-worthy. I love BOTH of your healthy cinnamon roll recipes! Protein pancakes are always a win in my book, and this one doesn’t even require protein powder!
