Lemon Meringue Protein Bars

These light and lemony protein bars are inspired from Fitness Model Jamie Eason’s Recipe.  A friend of mine requested a version without the crystal light lemonaide mix (artificial sweetener).  So here’s my version!

Makes 16 servings

1 cup oat flour (ground up oatmeal)
2 scoops vanilla protein powder (or plain)
1/2 tsp baking soda
1/4 cup Krisda stevia baking formula (or 10-12 packets of stevia)
4 egg whites (1/2 cup carton kind)
2 snack packs unsweetened applesauce (or 2/3 cup)
Zest of 1 lemon (approx 2 tsp)
1/4 cup fresh lemon juice (approx 1 lemon)
1/4 cup water
1 tsp lemon extract *see NOTE

Preheat oven to 350 degrees.  Mix together the dry ingredients – oat flour, protein powder, baking soda, stevia, lemon zest.  Add in liquid ingredients – egg whites, water, lemon juice, lemon extract, applesauce.  Mix well.  Pour into a sprayed 8×8 square oven proof pan.  Bake for 25 minutes until brown around edges and toothpick comes clean.  Cut into 16 squares.

NOTE: You should easily find lemon extract in the baking aisle, beside the other extracts (like vanilla etc)
